Summer in Washington is glorious, and our milk-producing animals are living their best lives. As the baby ruminants have been weaned and are frolicking in the countryside, the milk flows, resulting in better quality milk from content animals munching on lush Washingtonian pastures.

It’s the best time of the year to consume local, seasonal cheese because the spring and early summer vegetation translates into the cleanest, brightest, and most lip-lickable cheese of the year. As the season progresses, the vegetation changes, and so does the milk, becoming more nuanced.
