Tuesday Recipe and Wine Pairing

Ravioli Zafferano


Cheese ravioli
1 shallot
10-15 cherry tomatoes
1/2 C cooked crab
2 C heavy cream
parsley (optional)

Sauce: Sauté 1 shallot in extra virgin olive oil. When shallot is golden brown add in 10-15 cherry tomatoes & cooked crab pieces of your choice. Set aside .

In separate pan add 2 cups of heavy cream. Cook on medium high until it boils. Add a pinch of saffron and continue to reduce while stirring. Should take about 3 minutes.

And to pan with crab and shallot. Set aside.

Bring to Boil 1 gallon of water with salt. Add cheese ravioli. When ravioli floats, drain and remove.

Combine ravioli with crab sauce and garnish with parsley. Enjoy!
